Sweet Potato Fries

While it’s the perfect time for grilling burgers, there’s a healthier way to serve them up with fries. Instead of the frozen, oven baked variety, why not try a spicy twist with sweet potatoes. Even if you're not typically a fan, give these tasty sticks a try. Packed with Vitamins A and C, potassium (you thought only white potatoes had bragging rights), and a healthy dose of dietary fiber, these sweeties are a real treat. Spicy Sweet Potato Sticks

Ingredients:

1 Tbsp Olive oil

2 large sweet potatoes, washed and cut lengthwise into ½ inch sticks

1 teaspoon chili powder

½ cup grated Parmesan cheese

¼ teaspoon ground black pepper

Sea Salt to taste

Directions:

Preheat oven to 425°F.

Place sweet potato sticks in the bowl. Add chili powder, Parmesan, and black pepper. Drizzle or spray olive oil over top. Toss to coat well. Arrange potato sticks in a single layer on foil or baking sheet.

Bake 20 minutes, turn, and bake for another 10 minutes, until golden. Season with a bit of sea salt and share.
