Potato and Kale craving

Strange as it may seem, I’ve had a craving for this combo for a few weeks now. I think I saw a recipe somewhere when I was particularly hungry. Sauteed garlic, onions, and kale with boiled red potatoes. Whatever caused the uproar, I finally gathered the ingredients for dinner last night. Coupled with some leftover chorizo, we chowed until the mood passed. Kale is an amazing veggie. High in Vitamin A and calcium, as well as a good source of Vitamin C, folic acid, B6, and potassium. Need I go on?
